Ingredients
600g baby potatoes, halved
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried mixed herbs (or ½ tsp thyme + ½ tsp rosemary)
½ tsp sea salt
¼ tsp black pepper
1 tbsp fresh parsley, chopped (for serving)
Directions
Preheat oven to 200°C (180°C fan) and line a baking tray with parchment paper.
Add halved baby potatoes to a bowl and toss with olive oil, garlic powder, dried herbs, salt, and pepper.
Spread onto the tray in a single layer, placing each potato cut-side down for maximum crispiness.
Roast for 25–30 minutes, shaking the tray halfway through, until golden and lightly crisp.
Sprinkle with chopped parsley just before serving.
