Ingredients
200g gluten-free rolled oats
120g pecans, roughly chopped
3 tbsp melted coconut oil
80ml maple syrup
1 tsp vanilla extract
½ tsp ground cinnamon
¼ tsp sea salt
Directions
Preheat oven to 170°C (150°C fan) and line a baking tray with parchment paper.
In a large bowl, combine oats, pecans, cinnamon, and salt.
Pour in melted coconut oil, maple syrup, and vanilla, stirring until everything is evenly coated.
Spread the mixture onto the baking tray, pressing it together lightly to help form larger clusters.
Bake for 18–20 minutes, or until lightly golden and fragrant.
Allow to cool completely without stirring — this helps the clusters harden and stay chunky.
Once cooled, break into clusters and store in an airtight jar.
