Ingredients
1 tbsp olive oil
500g lean minced beef
1 medium onion, chopped
2 garlic cloves, finely chopped
1 red pepper, diced
1 can (400g) chopped tomatoes
1 can (400g) kidney beans, drained and rinsed
1 tbsp tomato purée
1 tsp ground cumin
1 tsp smoked paprika
½ tsp chilli powder (optional)
1 tsp sea salt
¼ tsp black pepper
200g cooked gluten-free pasta (such as penne or fusilli)
150ml coconut yoghurt or other dairy-free yoghurt
2 tbsp nutritional yeast (for cheesy flavour)
Fresh coriander, chopped (for garnish)
Directions
Preheat oven to 180°C (160°C fan).
Heat olive oil in a frying pan and cook the beef until browned.
Add onion, garlic, and red pepper; cook for 3–4 minutes.
Stir in chopped tomatoes, tomato purée, kidney beans, cumin, paprika, chilli powder, salt, and pepper. Simmer for 10 minutes.

Mix in cooked pasta and stir well to coat.
Pour mixture into a baking dish.
In a small bowl, mix coconut yoghurt with nutritional yeast and spread evenly over the top.
Bake uncovered for 20 minutes until bubbling and lightly golden on top.
Garnish with fresh coriander before serving.
