One Pot Pasta

A quick, flavourful pasta dish that comes together in just one pan — no draining, no fuss, and no complicated steps. This Gluten-Free Dairy-Free One Pot Pasta is the ultimate weeknight dinner: everything cooks together in the same pot, allowing the pasta to absorb the sauce and spices for maximum flavour.

Ingredients

  • 300g gluten-free spaghetti or linguine

  • 1 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 onion, finely chopped

  • 400g tin chopped tomatoes

  • 700ml gluten-free vegetable stock

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • ½ tsp salt

  • ¼ tsp black pepper

  • 100ml coconut milk or dairy-free cream (optional for richness)

  • Fresh basil leaves, for serving


Directions

  1. Heat olive oil in a large deep pan over medium heat.

  2. Add onion and garlic; sauté for 3–4 minutes until softened and fragrant.

  3. Stir in chopped tomatoes, vegetable stock, dried basil, oregano, salt, and black pepper.

  4. Bring the mixture to a simmer, then add the uncooked pasta directly into the pot.

  5. Cook for 10–12 minutes, stirring frequently so the pasta doesn’t stick.The liquid will reduce and thicken into a glossy sauce.

  6. Stir in coconut milk or dairy-free cream if using, and cook for 2 additional minutes until creamy.

  7. Serve immediately, topped with fresh basil leaves.


This recipe is naturally gluten-free, dairy-free, and easily adaptable with whatever vegetables you have in the fridge. One pot, minimal prep, and dinner is done in under 20 minutes.
