Today we are delving into a delicious journey of flavours and nourishment!
Diving into (although I would happily also dive into this tasty treat too) the realm of breakfast bliss with a recipe inspired by the 'Keto cookie dough bars' from Delish.
Say hello to our scrumptious Gluten-Free and Dairy-Free Breakfast Bars that not only satisfy your sweet tooth but also fuel your morning with wholesome goodness.
Packed with nutritious ingredients and of course some treats too, these bars are a perfect way to kickstart your day on a scrumptious note.
20 Bars Prep Time: 20 minutes Total Time: 2 hours 15 minutes
Ingredients for bars:
130g Vitalite
110g caster sugar
1 tsp salt
180g ground almonds
100g chocolate chips
Ingredients for topping:
2 cups chocolate chips
15g coconut oil
Directions:
1. In a large bowl mix vitalite, caster sugar, and salt until light and fluffy.

2. Then add and mix the ground almonds until no dry spots remain.

3. Next fold in 1 cup of the chocolate chips.

4. Coat a 8"-x-8" baking sheet (or any sheet/pan as long as it is freezer safe) lightly with Vitalite.
Line with parchment (optional step it just makes them easier to remove from the tin), leaving an overhang on two sides. Spread cookie dough evenly into pan.

5. Combine remaining 2 cups chocolate chips and coconut oil in a medium microwave-safe bowl. Microwave, stirring every 20 seconds, until smooth and pourable.

6. Pour chocolate over cookie dough layer and smooth, place in freezer to harden, 2 hours or up to overnight.

7. When ready to serve, remove from baking dish and cut into bars.
